I'm Gareth,
A full-time resident in San Marcos, Lake Atitlan, Guatemala. Growing up in South Africa, Biltong was part of life. We enjoyed this dried meat snack in our lunchboxes, as fuel for adventure races, a wingman to a six-pack of beers or a protein boost when camping or hiking.
But when I moved to Guatemala, I couldn't find anything like it.
So, in partnership with a local organic food network, Enverdece, we sourced pasture-raised, grass-fed, non-GMO, anti-biotic-free buffalo, and I started making Biltong in Guatemala.
We become what we consume, from the air we breathe, the media we watch and the food we eat. When we bring presence, awareness and gratitude to what we consume, our bodies and beings reflect this positive intention.
I aim to live this way and believe this is how food can be medicine.

Call To Courage Biltong is often sold out in locations around the lake and Antigua. We have a small production from our home on Lake Atitlan. By supporting this product, we're providing work to four Guatemalans who work with us. How It's Made
Biltong is the South African name for the product that results from spicing and air-drying meat. It was a way to preserve meat from before refrigeration. Biltong can be made with any meat, but the best taste and texture is from red meat like beef, buffalo or other game.
The meat is soaked in vinegar, rolled in a secret mix of salt, black pepper and roasted coriander seeds and hung to dry from a week to a month, depending on the thickness of the meat. When it's ready, it's hand-cut and served to eat!
Our industrial-strength vacuum-sealed packaging solution keeps the product preserved for up to six months without the need for refrigeration.
10 Ways To Enjoy Biltong
- Straight up - Simply enjoy biltong as a protein-packed snack on its own. It's a great on-the-go snack!
- As a date to a wine tasting, With a cheese platter - Pair biltong with your favourite cheeses, crackers, bread and a glass of wine.
- Biltong salad - Add some sliced biltong to a salad for an extra protein boost.
- Biltong-wich - Grab two slices of your favourite bread, add some clean butter, avocado, biltong slices, salt, pepper and a squeeze of lemon for a winner's sandwich.
- Biltong dip - Blend biltong, cream cheese, chives, salt, cayenne pepper and lemon juice for a protein-packed dip that goes great with crackers.
